I love steak, blue cheese dressing, and anything that has spice to it! This salad delivers on all counts! This is such an easy-to-make meal and a ton of fun to make. Feel free to play with the vinaigrette ingredients to get the taste/texture/consistency that you want.

Ingredients

About 6 oz of blue cheese (I use Pointe Reyes Original Blue)

1/2 of a shallot

2 cloves of garlic

1/4 cup of Marie Sharp’s Garlic Habanero Pepper Sauce
-
1 tablespoon of dijon mustard
-
1/2 cup of mayonnaise
-
3 tablespoons of avocado oil
-
1/4 teaspoon of black pepper
-
1/2 cup of red wine vinegar
-
1/2 of red onion, thinly sliced
-
1/2 cup of red wine vinegar

3 tablespoons of avocado oil

A pinch of cajun seasoning

Flank steak
-
1/4 cup of avocado oil

1/2 teaspoon of black pepper
-
2 tablespoons of cajun seasoning (can substitute with paprika and cayenne mixture)

1 tablespoon of Marie Sharp’s Caribbean BBQ Sauce Belizean Barbacoa Smokin’ Hot

Little Gems lettuce (you can also use butter lettuce)

Directions
Garlic Habanero Blue Cheese Vinaigrette
Put everything into a blender and blend until it reaches the consistency that you like. You can definitely play with the amounts to make this dressing as thin or thick as you like. Just add more mayonnaise for a thicker consistency.
Caramelized Onions
Slice the onion as thin as possible. Then add everything to a pan and sauté on low heat for about 25-30 minutes, or until the onions are completely caramelized.
Smokin’ Hot Flank Steak
Put the steak into a bowl and then cover the meat with all of the other ingredients. Let the meat marinate for about 15-20 minutes. You can let the meat marinate overnight for a better flavor.
Once the meat is done marinating, sear it on the stove and then finish by baking in the oven at 325° until done to your liking. I like mine medium/rare, so it took about 4 minutes to sear each side and then 20 minutes in the oven.
Let the meat rest for about 5 minutes when you pull it out of the oven. Then slice it! You can slice it thin or thick.
